The 8 course tasting menu is absolutely amazing , but what makes this place more special is the amazing staff ! these amazing people are masters of their craft and make everyone absolutely welcome. i brought my 8 year old daughter there and she had an absolute blast. thank you staff and thank you Chef Patrick Guilbaud for the amazing hospitality! we will definitely be back for more !!

Two of us sat down for the 8 course tasting menu with the wine accompaniment last night. We thoroughly enjoyed the evening and most especially the food. Each dish was really amazing. I think, and I can't believe I get to type this, the lobster tail & rubarb was my favorite. It's a long way from lobster tail I was raised.
All the staff were amiable and professional, but particular kudos to our sommelier, Youna, who kept our glasses fresh with amazing wines all night (I counted 11 different wine pairings I think). We were a couple of sheets to the wind at the end. Props also to to Stefan, for his hospitality and for his indulgence of our request for the final course. Just a fantastic experience, and I still have a smile on my face as a result.
Pricey for sure, but cheaper than therapy.

Ignoring other reviews, at the time of dining (2019) PG is the only 2 star in all of Dublin, and it stands out in terms of fine dining. The service was that of a 3 star, the staff extremely attentive and caring. I had just finished having a long day - left exhausted, so their attention to my needs was comforting and made me feel welcome amongst their clientele. Many of the diners were dressed very well and very proper, so for a young person wearing a simple outfit to still be treated with respect and attention places this venue very highly on my list.
The entire chefs tasting menu was stellar in many ways. Their plates used were all very simple, but the plating of the actual food was gorgeous and picture perfect. Simple things like a bread on a sauce looked like a magazine cover, while protein dishes like the crab wrapped in vegetable had style and elegance. Their green bean and truffle was so gorgeous, incredibly seasoned with a delightful crisp and all the right textures. Other dishes like the pasta covered in black truffle looked unique and earthy, juxtaposed atop the white plate. The primary protein dish looked playful and tasty, many colors on the plate and the meat had a little ravioli "hat". Besides all the dishes being a great mix of being fresh, savory, buttery - there was multiple taste buds being exposed with the sauces and creams. Also, one of the best chocolate deserts I've ever had - while the gold isn't my style, still looked gorgeous and will please many.
Everything PG did was done with excellence and class, being one of the best restaurants I've visited EMEA. Very highly recommended.

Great food and Service but still overprice looking at competition.
My wife and I had a dinner last week in PG and took the 8Course Tasting menu + Half wine matching. Total bill with 1 aperitif each was 630€.
This was a special occasion and I believe at this price tag I am expecting to be highly satisfied and to really feel that the experience is better than other Dublin restaurants.
The dish quality was really good (although dessert was slightly disappointing).
At the exception of an "old grumpy" waiter, the rest of the staff was really nice and professional.
If I had no other restaurants to compare PG to, I would have probably given 5 stars, however, having tried most of Dublin Michelin restaurants, I truly believe that this restaurant is overpriced for the food quality you are getting.
I have been to other Michelin star restaurants in Dublin where I paid almost half of the price and where food quality was as good or even more impressive.

We do love coming here! Dining room as been updated since COVID a d is much brighter. However, the service was a little less attentive than usual and had to try "catch the eye" of waiters several times. The food was excellent but I did feel my main was underwhelming. But I will return here again and again. The staff are just lovely, ambience amazing and food was beautiful.

Restaurant is nice but feels very dated in its approach to dinning. Had a drink beforehand in a drawing room which was nice but very much just a way to upcharge. Meal itself was hit and miss, ingredients felt like they had no tie to Ireland in anyway bit competantly prepared. Everything feels like stepping back 30 years ago which you may or may not like. Was served flat champagne almost right off the bat which was extremely offputting in a restaurant of this quality. The meal was all fine and service was top top notch (outside of the wine pouring mentioned), but very stuffy. I do not really recommend based on the price as the meal ultimately was forgetable sadly.

2 michillin stars, very high expectations but an overall lacklustre experience. Food was presented very well, but taste wise was still very average. There was nothing that I would call exceptional, or bad. Which for a 2star restaurant, is very disappointing.
The venue itself is very spacious with high ceilings. The staff were a bit stiff and weren't as engaging as I hoped. When you get a waiter who is excited to present you food, you know it's going to be good. But the waiters here were a bit like robots. However the owner was going around and meeting the customers, he was a lovely man and made it feel more comfortable.
Would I visit again in the future? Probably not. Food was average, atmosphere is a bit stiff, and it wasn't cheap.

If you want to feel like royalty this is the perfect place to dine. The surroundings are opulent but gracious - a spacious and airy chamber with a curved, burnished ceiling, fine linen and tables well spaced from each other. Finest local ingredients (apart from the butter, which is hand-churned and imported from France); each dish was beautifully prepared and exquisitely presented. If you want superb, classic French cuisine it is on the menu (the pan-fried fois gras with fresh pineapple, caramel and tonka bean was excellent, as was the pistachio souffle with almond milk ice cream), but there are also subtle and exciting pairings - lobster served with smoked aubergine and a spicy red miso, combined with salted buttery sauce and mashed potato with spring onion, an imaginative combination. My only criticism would be that the amuse bouche are perhaps too similar to some of the dishes to be enjoyed later in the meal. The staff are charming and very attentive. Good choice of wines to complement the cuisine. Excellent coffee and petit fours.

Had a very pleasant birthday lunch in Patrick Guilbauds. Seamless service from all staff from the moment we arrived until departing. The starters and cheese board were the highlights. We had the à la carte menu rather than the set lunch and unfortunately the mains were slightly disappointing; the fillet of Irish beef cooked more medium than rare for my taste and somewhat lacked imagination compared to some of the other dishes. The next time I will order differently.
However, would easily dine here again and again for the wonderful ambience, vast wine selection and excellent staff.

Attentive and kind staff. It was our first Michelin star restaurant so I can't really compare with others but it made our night memorable. From entering to the restaurant to the tea at the end, every bit was well thought and you notice it through every action of staff.
I'd definitely suggest it for a special night.

Every time you go it’s exactly as amazing as the last time, ambience, service, attention to detail, these are the reasons why this restaurant is indisputably the best restaurant in Ireland and proudly holds claim to two coveted Michelin stars, the only restaurant in Ireland to do so.
If you’re not sure what to order the 8 course tasting menu is the way to go, with wine pairings and your off to the races, they even pair each cheese with an individual wine, and my do they have a selection, just bliss.

My experience of good French restaurants is that the staff are invisible until you need something and then they appear at your elbow as if by magic.
Here there are a lot of people milling around, looking at your empty plate and ignoring it. The wine waiter is really good though, she talked through my preferences and I was very happy with the wine she selected.
Superb flavours, top notch ingredients made into top notch food.
Go for the flavours, ignore the disinterested questions as to how you liked it and listen to that great wine waiter.
And yes I'll be back.

We ordered a 8 course tasting menu, however, there was no palate cleanser in between at all! It is such a big let down. For that price, it just dosen't worth it. I would go for Glovers alley for almost half the price and better food. I didn't know how they reach a two stars at all.

I do not know what it takes financially to run a restaurant at this level. What they present here is extraordinary. When one decides to dine at this level, I dare say it should not be on a dare. You sit as a partner with the establishment, and most often, something magical occurs. It did for us at Guilbaud. The whole experience was effortless for us and is something I would hope to do again. I always start this process and hope for the best in food, service and comfort. The staff here delivered.
I noticed another diner wrote of a disappointing experience. They spoke of being from New Orleans , where no fewer than 35 Michelin rated restaurants set the standard for he and his wife. That remark as “proof” of his opinions tells it all. Basing criticism on a lie is no way to improve any establishment. His intent is laid bare. Please take that nonsense down to McDonalds for that hamburger you desired.

On entering the beautiful renovated Restaurant, you are struck by the welcoming staff & the new decor colours are soft & warm.
Now for the food. We ate off the set menu. I had the pumpkin soup, seabream on a bed of saffron puree, lots of yummy potato putee. Chocolate mousse, peanut butter absolutely gorgeous & each mouthful was better than the last. This is fine dining at the top of culinary experiences. This is a restaurant that I would highly recommend. Your taste buds will be dancing with all the gorgeous food. Could say lots more, but just book lunch, which is a bargain for €60. Dinner bit more expensive, but also well worth it. Hope to get back very soon. Thank you.

The good:
Beautiful dining room, very nicely decorated and with dramatic lightning. Food is good and you can feel there is a theme in the dishes (even if the dishes are not always balanced in terms of contrast).
The bad:
The waiting staff is a bit over-friendly to the limit of casual in their comments. Big tables can get easily very loud and annoy other tables with their noise. Finally, they got my order completely wrong, they apologised profusely, but that should not happen on a two Michelin star restaurant, that is why they get 3 stars from me.

Was good but no WOW factor for me.
They put on a tremendous spectacle for you, no doubt. And that was indeed very interesting. There is a lot of staff, all obviously very knowledgeable. And we were able to understand most of it through the heavy french accent. Everyone plays their part. It was a good show.
The food, however, didn't WOW me. It was just ok. I feel it lacked intensity in the flavours, and a bit of a more modern twist to it.
At the end, everyone comes say goodbye. Nice touch.

I do quite a lot of fine dining so was expecting something really special for 2 Michelin stars (only my 2nd) but I have to say it was a little disappointing. I've had better meals in lower rated restaurants. The blue lobster was basically raw in the middle while the king scallops my wife had were "chewy". Some nice touches between courses and the ambiance was wonderful. But at the end of the day it's the food that counts and especially when a meal for two is €350

Very disappointing experience foodwise. It does definitely not deserve two Michelin stars (not even one). We got the four course tasting menu. One dish was munkfisk with curry. Not really what you would expect from a Michelin place. It seemed like they tried to be experimental, but could not completely figure out exactly how to. Nice service though.

First off, I want to say the meal was very good and I would recommend the restaurant to others. There was a few small things that could have been improved on however. I went there Friday the 9th with two of my mates and we arrived a few minutes early to our reservation. We had to wait for 5 minutes in the hallway before anyone even came out to seat us. We all ordered the 8 course tasting menu. The langoustine bisque was served extremely hot to the point that it would have burned your tongue if consumed immediately. The red snapper course was a bit of let down too. It tasted very plain with no real excitement to any of the components of the dish. The lamb dish that followed was actually the best tasting lamb dish I have ever had in my life though. Truly spectacular. The final chocolate dessert was a little bit of a let down too. I'm not a fan of gold leaf as I don't find it adds to dish but that dessert was very one dimensional with no textures or different flavours. The other dishes were all very good though.
The service had some mistakes in it as well. I understand it is a french restaurant and they hire french staff, however it was very hard to understand what some of the servers were saying. It could have been improved by simply providing a printed out copy of what was on the 8 course "mystery" tasting menu. Also we just had water and no wines but even at that our glasses were empty and not filled for a good 15 minutes in the dessert part of the meal. The bathroom was also not very clean at the end of the night as well. Then when we were leaving we handed the server our coat tags and then he said to follow him as there was no coats with our tags so we went to the hangers and had to find our coats ourselves. Then as we were leaving the restaurant one of the french servers was talking to some french guests by the door and completely ignored us as we opened the door ourselves to leave. I know these are all tiny details but that is just what in my opinion could be improved upon.

And the deserts... the popcorn ice cream tastes so different. But in a good!! It's fresh and it breaks the sweet of the Parfait itself. Which is a brilliant combination.
All breads, pre starters and pre/post desert were delicious!
we got to meet Stephane, who gave us a good attention and is a very sound person.
We really had a great time. I'll come back for sure.
Tip for people who have never been in a high standard restaurant:
Note: this is Michelin star restaurant!!!
Never expect to have big portion of food on the plate. You'll get a high quality food, very tasty and so on. You'll be full at the end. Just don't raise your expectations based on the amount of the portion just because you're paying quite a expensive price. You're paying for a great quality food.

To say that Saturday nights "experience" was a disappointment would be an understatement.
Our reservation was for 7:30 and we were out by 9:00, including a pre-dinner drink. I have spent longer eating in McDonalds.
The meal itself was not to the standard to which I have been used to here.
We dined in the Merrions Cellar restaurant on the Friday night and the food there was excellent, I even asked the waiter if a chef from Gilbaud cooked it!! Obviously not.
My wife did complain and was offered a glass of Champagne, but as she doesn't drink she declined. A restaurant of this caliber the manager should have known this.

I had just arrived in Dublin after spending two weeks on a food wine, and safari tour of South Africa and Zimbabwe, and I wanted to keep up the gastric adventure as I had three days in Ireland to kill. After careful research, and menu study, I decided on Restaurant Patrick Guilbaud at the Merrion Hotel in the Dublin City Center. Normally when I visit a country I focus only on the cuisine that the specific country offers, in this case Irish. Patrick Guilbaud was more of a French infusion, but had some Irish dishes. The main reason I chose them is because they were listed in the top 10 restaurants in Dublin, and Elite Traveler had them listed as number 80 in the top 100 restaurants of the world. Considering one of my many bucket lists includes visiting the top 100 in both the Elite Traveler and San Pellegrino lists, I added Patrick Guilbaud to my list based solely on that merit alone.
The service staff was dressed in tuxedos, with both Captain or main server and back waiter assistant. A gentleman approached and took my drink order, as well as presented me with the menu’s. The restaurant offered assorted ala cart options from two to four courses, and a four or eight course degustation menu. There wine list was one of the most impressive that I have seen in a restaurant since dining at The French Laundry in Napa Valley, consisting of over 25,000 worldwide selections. As I reviewed the menu selections, the Captain waiter on more than one occasion would push the 8-course degustation menu. I understood mentioning it once, but in a fifteen minute period bringing it up three times, with the third time being almost rude about, was not selling me on that menu, but irritating me. I made my selection of the four-course ala carte with appetizer, meat, fish, and dessert selection. The funny thing, is that I was ready to choose the 8-course if it weren’t for the waiter arrogantly trying to push it on me. I was escorted into the dining room and seated at my table.
The food was exquisite, and the presentation was top notched, putting it into the same category for me as other French restaurants such as Fleur de Lys, in San Francisco and Restaurant Le Gabriel, in Bordeaux. The restaurant itself has very high standards and an outstandingly professional kitchen staff with Chef Lebrun at the helm, the only reason why I did not give Patrick Guilbaud higher rankings was the service staff’s arrogance at the start of my experience. Once I arrived at my table a female server took over, and she was exceptional and spot on with her delivery and expertise. The highest standard of dining in Ireland. As with most things, you get what you pay for. Foie gras is to die for and quite unique here. The chocolate fondant dessert is also fabulous. Would only criticise the apple ice cream dessert. Staff are very professional.

On a freezing night in Dublin, we were warmly welcomed at Patrick Guilbard and made to feel at home in this comforting space. We highly recommend:

John Dory chardonnay butter wild mushrooms & herbs, and
Spicy lamb(only so-so--not spicy as promised).
